Original Peri Peri BrazzaKu sauces and marinades are artisan crafted in small batches and are made according to traditional Portuguese family recipes. Only freshly sourced ingredients are used, and no preservatives, additives, colorants or sugar are added to the product.



Perfectly Grilled Peri Peri Chicken

























Prep 15 min, plus marinating
Cook 40 min
Serves 4


4 chicken legs (thigh and drumstick), skin on, bone in


For the marinade

6 tablespoons of BrazzaKu original or mild Peri Peri sauce
Juice of 1 lemon
4 garlic cloves, peeled and crushed
2 tsp flaky salt

50ml olive oil

1/2 cup of buttermilk


Bunch of cilantro freshly chopped


Whisk together the lemon juice, garlic and Brazzaku Peri Peri sauce for the marinade. Put the chicken in a roasting tin just big enough to hold it, and pour the garlicky and flavorful juice all over it, turning to ensure it’s well coated. Sprinkle with the salt, cover and leave at room temperature (unless it’s a very hot day) for an hour.

Prepare the barbecue  with a grill mat to prevent the marinade from dropping through the grate. Once it’s at cooking temperature <500 degress, grill the chicken for 35 minutes with the lid on, then check. If it’s almost done, then brush with BrazzaKu Peri Peri sauce and cook, lid off, for about another 10 minutes, until cooked through.

Serve with a side of your favorite grilled vegetables and enjoy!
